The first thing that comes to mind is Cherith Bible Institute (
http://cherith-bible-inst.org/), and excellent program by James Jones. I think he's offering a three-year program, so it may not be exactly what you are thinking of doing.
I think that this is such an ideal application of Internet technology -- providing education, discipleship, and support to Christians in every corner of the globe. The technology is perfectly suited to it.
There is some open source, free-to-use courseware that you might find useful. It's called Moodle (
http://www.moodle.org/). I have not used it personally but know of people that do. It may be overkill for what you are planning, or it may be just what you need. Either way, it's free to use.
